YESSSSS!!!!! I have that weird Joy of Cooking volume that came out in 1997, where they decided the old one was too “proletariat,” I guess, and subbed in all the stuff like canned soups with actual roux(s?)(es?)(whatever the plural of roux is). They put the canned soups back in 2006, because it was sorta bullshit. Anyway, my point is that I make the 1997 version with the actual roux, like you do here, and it took something that’s a guilty pleasure for me as a midwesterner (you can take the girl out of Aurora, but not Aurora out of the girl) and made it FUCKING DELICIOUS. Like no shame delicious. I made it for friends and they’d be like “GROSS MIDWESTERN SLOP WHY” and then they’d eat the whole thing and beat the table for more. Thank you for defending the casserole and reminding us that casseroles are on a continuum made up of many vectors (I will still eat the soup one GLADLY. Especially if you throw some sour cream or mayo or better yet both in the mix).
